  • Chickpea flour 1 cup

  • Green onions 3 (white and green part), chopped

  • Sautéed mushrooms 4

  • Garlic powder ½ teaspoon

  • Onion powder ½ teaspoon

  • Baking powder ½ teaspoon

  • Black pepper ¼ teaspoon

  • White pepper ¼ teaspoon

  • Nutritional yeast 1/3 cup


  • Combine nutritional yeast, chickpea flour, baking powder, garlic powder, onion powder, black pepper, white pepper, and 1 cup of water in a bowl and mix well until the batter is smooth.
  • Heat a nonstick frying pan on medium heat. Now pour the batter into the pan just like making a pancake. Sprinkle 1 to 2 tablespoons of green onion and mushroom into the batter for each omelet and cook for 5 minutes or until it cooks.
  • Flip and cook for 4 to 5 more minutes or until the underside is browned.
  • Serve with tomatoes.
