Easy Mediterranean Pinwheels
These Mediterranean pinwheels are super easy to make and ultimately delicious lunch for you and your family.

For the tahini sauce:
Tahini paste 3 tablespoons
White vinegar 4 tablespoons
Lemon juice 3 tablespoons
Garlic 1 clove
Water ½ cup
Salt and pepper to taste
For the pinwheels:
Artichoke in a jar, sliced
Olives ½ cup, sliced
Cherry tomatoes ½ cup, sliced
Plant-based green tortillas 3 tortillas
- To prepare tahini sauce; combine all ingredients of sauce in a bowl and mix well until creamy.
- To assemble the pinwheels; spread about 1 tablespoon of the tahini sauce on each tortilla.
- Add the sliced vegetables and top with a handful of lettuce on each tortilla.
- Tightly roll the tortillas and cut into pinwheels.
