  • For the tahini sauce:

  • Tahini paste 3 tablespoons

  • White vinegar 4 tablespoons

  • Lemon juice 3 tablespoons

  • Garlic 1 clove

  • Water ½ cup

  • Salt and pepper to taste

  • For the pinwheels:

  • Artichoke in a jar, sliced

  • Olives ½ cup, sliced

  • Cherry tomatoes ½ cup, sliced

  • Lettuce

  • Plant-based green tortillas 3 tortillas


  • To prepare tahini sauce; combine all ingredients of sauce in a bowl and mix well until creamy.
  • To assemble the pinwheels; spread about 1 tablespoon of the tahini sauce on each tortilla.
  • Add the sliced vegetables and top with a handful of lettuce on each tortilla.
  • Tightly roll the tortillas and cut into pinwheels.
