BLT Sandwich Eggplant Bacon

This eggplant bacon, lettuce leaves, and sliced tomato filled sandwich is very easy to make and a healthy lunch.

  • Plant-based sandwich bread 2 slices

  • Eggplant bacon 6 slices

  • Onion ¼ medium, thinly sliced

  • Ripe tomato ½ medium, thinly sliced

  • Green lettuce 2 leaves

  • Hummus 2 tablespoons


  • Heat a nonstick skillet over medium heat and add eggplant bacon in it.
  • Cook for 2 minutes per side or until warmed through.
  • Remove from heat and set aside.
  • Toast bread slices.
  • To assemble; spread hummus on the toasted bread slices.
  • Top one piece of bread with eggplant bacon, onion slices, tomato slices, and lettuce leaves.
  • Top with another piece of the bread slice and serve.
