BLT Sandwich Eggplant Bacon
This eggplant bacon, lettuce leaves, and sliced tomato filled sandwich is very easy to make and a healthy lunch.

Plant-based sandwich bread 2 slices
Eggplant bacon 6 slices
Onion ¼ medium, thinly sliced
Ripe tomato ½ medium, thinly sliced
Green lettuce 2 leaves
Hummus 2 tablespoons
- Heat a nonstick skillet over medium heat and add eggplant bacon in it.
- Cook for 2 minutes per side or until warmed through.
- Remove from heat and set aside.
- Toast bread slices.
- To assemble; spread hummus on the toasted bread slices.
- Top one piece of bread with eggplant bacon, onion slices, tomato slices, and lettuce leaves.
- Top with another piece of the bread slice and serve.
